Wild Blackberry Cobbler

We have wild blackberries on our property. They have been quite prolific this year. We ended up with 4-5 gallons of blackberries this year and I made several cobblers. Here’s my recipe for wild blackberry cobbler.

Filling

In a large pot, I combine

  • about 6 cups of rinsed blackberries
  • with enough water to cover them.
  • 1 cup of sugar/sweetener (I use Monkfruit),
  • 1 tsp vinegar.

Bring that to a boil and add 1 tsp vanilla at the end.

Batter

The batter is

  • 1 stick of butter melted,
  • 1.5 cups self-rising flour sifted, and
  • enough milk to make a drop-biscuit batter.

I put the blackberries on the bottom of a 9″x13″ pan, then drop the biscuit batter on top of that. Bake at 400 degrees Fahrenheit for about 25-35 minutes or til the biscuit dough is done and slightly browned.

Serve with vanilla icecream.
